Bread dough ingredients:

  • 1 egg
  • 25 ml of warm water
  • 100 ml of warm coconut milk

  • 250 ml coconut milk

How to make:

  • Knead while pouring coconut milk until it forms a smooth, non-sticky mixture in the hand.
  • Round and let stand at room temperature for 1 hour until it expands twice.

Ingredients:

  • ½ coconut, grated, roasted to dry

Seasoning:

  • 3 pieces of kluwek
  • 2 bay leaves
  • 10 onion cloves
  • 3 garlic cloves
  • 2 lemongrass stems
  • 2 cm galangal
  • 2 cm cinnamon
  • 1 tablespoon of brown sugar
  • 1 tablespoon cilantro
  • 1 teaspoon cumin
  • 1 tsp pepper
  • 5 cloves
  • Salt and Javanese Acid to taste

How to make:


  • Clean the snapper then wash. Apply lime juice. Set aside. Mash the roasted coconut until the oil comes out.
  • Saute cilantro, pepper and cumin with a little oil, then purée. 5 red onion cloves are chopped and fried into fried shallots. The remaining shallots, garlic, and lemongrass are chopped and then fried in oil.
  • Add fish and continue to fry briefly. Add fine spices and one liter of water, cook until boiling. Mix kluwek and tamarind with half a liter of water, purée, then strain.
  • Add bay leaves, cloves, cinnamon, acidic solution and kaloa to the stew.
  • After boiling, put the gongs with coconut until the sauce becomes slightly thick. Lift. Serve with a sprinkling of fried onions.
